摘要
大豆多肽是大豆蛋白水解产物,其氨基酸组成与大豆蛋白几乎一样,且其必需氨基酸比例平衡而含量丰富,具有比大豆蛋白更优越生理功能和加工性能;国内外许多研究表明,大豆多肽开发具有巨大潜力。该文对大豆多肽功能及其应用进行总结和评述,并对其开发应用前景进行展望。
soybean peptides is hydrolysates of soybean protein, its amino acid composing almost is the smae as soybean protein and the content of necessary amino acid is abundant and balanceable. It has more excellent functional properties than soybean protein. This make soybean protein utilization area wider in much extent. Some research show that exploiture of soybean peptides has great potential. This article discussed function and utilization of soybean peptides and prospected.
