摘要
研究了喷雾干燥法制造新型功能性物质—植物甾醇酯微胶囊化粉末的工艺和技术。结果表明,原料配比为植物甾醇酯30%~40%,乳化剂1%~2%,稳定剂0.5%~1.2%,碳水化合物和蛋白质等壁材58%~68%。最佳均质压力为35~40MPa,喷雾干燥工艺条件为进风温度195℃,出风温度75℃,进料温度55~65℃,进料流量120ml/min。性状分析表明,微胶囊型植物甾醇酯的水溶性、流动性、分散性及稳定性等性能指标良好。
This thesis studies the technology of spray drying microencapsulation of Phytosterol esters.The result showed that its composition was:phytosterol esters30%~40%,emulsifier 1%~2%,stabilizer 0.5%~1.2%,carbohydrate and protein58%~68%.And the suitable homogenization pressure was35~40Mpa.The optimum spray drying conditions were feed temperature55~65℃,feed flow rate120ml/min,inlet temperature was195℃,and outled temperature was75℃.The characteristics of microencapsulated phytosterol ester powder inclued good water solubility,dispersibility and stabilities.
