摘要
固定化技术以它许多独特的优点,为啤酒生产提供了一套快速、连续、简便的酿造方法。此法在节省设备投资和缩短发酵周期等方面是其它方法无法相比的。本文较详细地总结了酵母细胞的固定化方法,对目前国内研究最多且应用最广泛的三种固定化酵母细胞的制备方法作了重点介绍,同时综述了固定化酵母细胞在啤酒发酵工业中的应用等问题。
By means of excellent immobilization technique, a fast, convenient and continuous brewing method which is incomparable in economizing investment and reducing fermentation period has been obtained for beer manufacture. This parper summarizes in details the immobilization methods and the applications of immobilized yeasts in beer manufacture, especially three of them which are being widely studied and used.
