摘要
通过实验比较了黄豆发芽前后β 淀粉酶的活力及影响发芽黄豆β 淀粉酶提取的主要因素,确定了最佳提取参数。结果表明,在黄豆发芽的第三天,提取液的β 淀粉酶的活力为最大;最佳提取条件是,以1g/L的亚硫酸氢钠为还原剂,温度为40℃,pH值为5.7,提取液放置时间为1.5h.
β-Amylase was extracted from yellow bean in water solution. The experiment compared the activity of β-amylase for the germinated yellow bean and ordinary yellow bean. The results showed that the activity of β-amylase from germinated yellow bean is higher than ordinary yellow bean. The optimal extractive time and pH and the temperature were selected in experiments.
