摘要
姜辣素在食品工业和医药方面有很高的应用价值和发展潜力。本文介绍了姜辣素在组成、提取、测定及医药方面的研究进展,并对姜辣素研究中存在的问题进行了探讨。鉴于生姜具有多种药效功能,利用现代先进技术来解决姜辣素的分离和分析问题将具有十分重要的意义。
Gingerols have high application value and development potential in food and medicine industries.In this paper,the composition,extraction,analysis and pharmaceutical function of gingerols are reviewed and the problems in gingerols research are discussed.Seeing that the ginger has a variety of pharmaceutical function,it is very important to solve the problems of the separation and analysis of gingerols by state-of-art techniques.
