姜油树脂、水剂、油剂生姜提取物的抗氧化能力高于BHT;添加油剂生姜提取物猪油的POV值明显低于BHT,添加油剂的猪油、豆油、花生油的POV值低于对照,这说明生姜提取物可以有效地抑制食用油脂的氧化酸败。
Antioxidant effect of Ginger oleoresins,aqueous ginger,extractive,oily ginger extractive is stronger than that of BHT.The POV of lard added by oily ginger extractive is remarkably lower than that of BHT.The POV of lard,soybean oil,peanut oil added by oily ginger extractive is lower than that of control.This shows that ginger extractive can effectively inhibit the oxidation of oil.
