摘要
报道了兰州红心萝卜色素的提取条件和方法,讨论了光、热、pH值、食品添加剂以及重金属离子等对红心萝卜色素稳定性的影响,为兰州红心萝卜色素的开发、利用提供了理论依据.
A method of extracting red pigment from Lanzhou's radish was studied as well as on the effect of light,heat,pH,several kinds of food additives and heavy metal ions on the stability of red radish pigment.The research provided academic basis for the use and exploitation of red radish pigment.
