摘要
研究了过氧化氢对低聚木糖浆的脱色效果。试验结果表明,当过氧化氢的添加量为糖浆固形物的2.8%时,脱色率达到66.9%,而糖浆中还原糖和总糖几乎没有变化;当过氧化氢的添加量为糖浆固形物的2%时,脱色率为52%,低聚木糖总含量降低1%。
The decolouring effect of hydrog en peroxide on XOS syrup was investig ated.The results showed that when the amount of hydrog en peroxide added to the XOS syrup was 2.8%(based on the total soluble solid in the syrup),the decolorizing rate reached66.9%,while the content of reducing sug ar and total soluble sug ar in the syrup were almost the same.When the amount of hydrog en peroxide added to the XOS syrup was 2.0%(based on the total soluble solid in the syrup),the decolorizing rate was 55.2%,and the content of total xyloolig osaccharides in the syrup decreased slig htly by 1%.
