摘要
液态食品的非加热杀菌技术是食品杀菌的前沿技术 ,本文综述了 4种主要的非加热杀菌技术———超高压杀菌、脉冲磁场杀菌、高强度脉冲电场杀菌和液中脉冲放电杀菌的原理与研究进展 。
The non-thermal pasteurization technology of liquid foods is one of research focuses of food pasteurization technology nowadays. This paper discusses the principle and research advances on pasteurization using high-pressure,alternating magnetic field, high-intensity pulsed electric field and impulse discharge, and points out the direction of studying non-thermal pasteurization.
