摘要
水果的含水量高、营养物质丰富,极易因自身代谢活动(呼吸作用、蒸腾作用和乙烯释放)和环境中微生物的侵染导致新鲜水果品质劣变,进而造成较大经济损失。近年来,随着消费市场对水果高品质的迫切需求,催生了水果品质劣变的智能监测与调控技术相关研究。基于此,本文首先介绍了智能仿生感官评价技术在水果品质劣变监测中的应用;其次,概括了目前普遍用于监测水果品质劣变的智能指示标签;最后,梳理了通过调控气体、温湿度和抗菌物质的智能包装技术在水果品质劣变控制中的应用,以期为水果品质劣变的智能监测、新型智能包装技术及促进水果产业高质量发展提供依据。
Fruits are high in water content,rich in nutrients,and are highly susceptible to degradation of fresh fruit quality due to their own metabolic activities(postharvest respiration,transpiration and ethylene release)and microbial infestation in the environment,which can lead to large economic losses.In recent years,with the high demand for fruit preservation in the consumer market,it has spawned the research related to intelligent monitoring and regulation technology of fruit quality deterioration.Based on this,this paper firstly introduced the application of intelligent bionicist sensory evaluation techniques in fruit quality deterioration monitoring.Secondly,it outlined the smart indicator labels that were currently commonly used to monitor fruit quality deterioration.Finally,it sorted out the application of intelligent packaging technology in the control of fruit quality deterioration by regulating gas,temperature and humidity and antimicrobial substances,with a view to providing a basis for the intelligent monitoring of fruit quality deterioration,new intelligent packaging technology and the promotion of high-quality development of the fruit industry.
