回顾了35年来“四高两长”酱酒酿造理论探索、酝酿、研究、形成过程,对“四高两长”酱酒酿造理论的作用、价值、地位作了肯定。“四高两长”填补了酱酒酿造理论空白、在酿酒知识上有所创新、对酱酒酿造具有指导作用、对行业发展具有促进作用。
The article reviews the exploration,brewing,research and formation process of the "four high and two long" theory in Maotai-flavor liquor making during the past 35 years,and affirms the role,value and status of this theory."Four high and two long" theory fills the theoretical gap in Maotai-flavor liquor making,makes some innovations in liquor making knowledge,plays a guiding role in Maotai-flavor liquor making,and promotes the development of the industry.
