概述了酱香型白酒的生产现状,简介酱香型白酒中风味物质的组成及特点,分析了微生物在酱香型白酒酿造中的作用并对其发展前景进行展望。
The production status of Jiang-flavor liquor at present was elaborated, the composition and the characteristics of flavoring substances in Jiang-flavor liquor were introduced, and the roles of microbes in the production of Jiang-flavor liquor were summed up and their devlopement was forecasted.
