摘要
综述了生物法生产山梨醇的新工艺,该工艺特点是使用parabacteroides goldsteinii多功能益生菌调控生产山梨醇,结合益生菌本身的功效,以改善天然山梨醇特异性和敏感性。新工艺具有清洁、生态、友好、节能和节约成本等优势,极具开发潜力。山梨醇可以有效用于低热量食品、糖尿病食品饮料、发酵食品、烘焙产品、保健食品和膳食补充剂等,新工艺有效拓展了山梨醇的应用。
The new process of biological production of sorbitol reviewed in this paper.Its feature is to use P.Goldsteinii multifunctional probiotics to regulate the production of sorbitol,and combined the efficacy of the probiotics themselves to improve the specificity and sensitivity of natural sorbitol.The new process has the advantages of clean,ecological,friendly,energy saving and cost saving,and it displays great development potential.The produced sorbitol can be effectively used in low-calorie food,diabetic food and beverage,fermented food,bakery products,health food and dietary supplements,etc.The new process has effectively expanded the application of sorbitol.
