摘要
山梨醇是葡萄糖氢化的产品,是一种只含有羟基官能团的碳水化合物衍生物,除广泛应用于医药、化工等行业外,同时作为食品添加剂也大量应用于食品工业。文中重点介绍了山梨醇的生理功能及其在食品工业中的应用。
D-sorbitol, hydrogenated from glucose, is a carbohydrate derivative only containing hydroxyl function groups. It is not only extensively used in medicine and chemical engineering, but also in food industry as food additive. The physiology function of D-sorbitol and its application in food industry were introduced in this paper.
