响应面法优化酶辅助提取枣渣中水不溶性膳食纤维工艺 被引量:7

Optimization of Enzymatic Extraction of Insoluble Dietary Fiber from Jujube Residues by Response Surface Methodology

摘要 以冬枣渣为原料,通过酶解工艺制备枣浆,采用α-淀粉酶添加量,酶解温度和酶解时间为考察指标,在单因素试验的基础上,采用响应面法优化枣渣中水不溶性膳食纤维工艺。结果表明,枣渣中水不溶性膳食纤维最佳工艺条件为:α-淀粉酶添加量1.0%,酶解温度80℃,酶解时间110 min,枣渣中水不溶性膳食纤维得率为28.91%,为枣渣中水不溶性膳食纤维工业化生产提供一条新途径。 Using winter jujube dregs as raw materials, the jujube pulp was prepared by enzymatic hydrolysis. The addition of α-amylase, enzymatic hydrolysis temperature and enzymatic hydrolysis time were used as inspection indicators. Based on single-factor experiments, response surface methodology was used to optimize the reclaimed water insoluble dietary fiber technology. The results show that the optimal processing conditions for water-insoluble dietary fiber in jujube residue are: α-amylase addition amount 1.0%, enzymolysis temperature 80 ℃, enzymolysis time 110 min, yield of water-insoluble dietary fiber in jujube residue is 28.91%, which is industrial production of water-insoluble dietary fiber in jujube residue provides a new way.
