红枣膳食纤维的提取工艺及其在食品工业中的应用 被引量:1

摘要 红枣富含铁、维生素、膳食纤维等多种营养成分,其中膳食纤维作为“第七大营养素”对人体健康有许多益处。红枣作为膳食纤维的良好来源,对其开发利用仍不够充分,其膳食纤维在枣酱、枣汁等的加工过程中常被浪费。鉴于此,该文综述红枣膳食纤维的不同提取方法,并总结近年来红枣膳食纤维在乳制品、面制品和肉制品工业中的应用进展,并提出未来红枣膳食纤维研究的发展方向及应用前景,以期为延长红枣加工产业链,提升产品附加价值提供参考。 Jujube fruits are rich in various nutrients such as iron,vitamins,and dietary fiber,among which dietary fiber,as the seventh abundant nutrient,offers numerous benefits for the human body.Despite being a valuable source of dietary fiber,jujube fruits remain to be developed.The dietary fiber contained within them often goes to waste during the processing of jujube jam or jujube juice.Therefore,the diverse extraction methods of dietary fiber from jujube fruits were summarized,and the recent advancements in the applications of the dietary fiber across the dairy,flour,and meat product industries were reviewed.Furthermore,the potential development directions and application prospects of dietary fiber from jujube fruits were outlined,with the aim of providing a scientific foundation for extending the processing chain and enhancing the added value of jujube fruit products.
