发酵棉籽粕膳食纤维制备的工艺参数优化 被引量:2

摘要 为了提高发酵棉籽粕可溶性膳食纤维(SDF)提取率,得到最佳提取条件,进行了发酵棉籽粕膳食纤维制备的工艺参数优化研究。通过单因素试验,以SDF提取率作为指标,测定了酶解温度、酶解时间、料液比、复合酶含量4个因素的变化对SDF提取率的影响。在此基础上进行4因素3水平的正交试验优化,以期确定最佳工艺参数。结果表明:发酵棉籽粕SDF最佳制备工艺参数为:酶解温度45℃,料液比1.10,酶解时间2.5 h,复合酶含量0.5%,SDF提取率为26.53%,与单因素试验最佳提取率相比,提高了1.5%。说明工艺优化后提高了SDF提取率,为发酵棉籽粕的高效利用奠定了基础。 In order to improve the extraction rate of SDF(soluble dietary fiber)from fermented cottonseed meal and to obtain the optimal extraction conditions,a study on the optimization of process parameters for the preparation of dietary fiber from fermented cottonseed meal was conducted.The effects of changes in four factors,namely,enzymatic digestion temperature,enzymatic digestion time,feed-to-liquid ratio and compound enzyme content,on the extraction rate of SDF were determined by single-factor test with soluble dietary fiber(SDF)extraction rate as the index.On this basis,a 4-factor,3-level orthogonal test was conducted to optimize the optimal process parameters.The results showed that the best process parameters for the preparation of fermented cottonseed meal dietary fiber as the following:enzymatic digestion temperature of 45℃,feed-to-liquid ratio of 1:10,enzymatic digestion time of 2.5 h,and compound enzyme content of 0.5%,and SDF extraction rate increased to 26.53%.Compared with the best extraction rate of the single-factor test,it increased by 1.5%.It indicated that the process optimization improved SDF extraction rate and further improved the utilization rate of fermented cottonseed meal.
