摘要 壳聚糖具有良好的成膜性、抑菌性和安全性。本文介绍壳聚糖的特性,综述其在鸡蛋涂膜保鲜中的应用研究进展,旨在为壳聚糖在禽蛋防腐保鲜方面的深入研究与开发应用提供参考借鉴。 Chitosan has excellent bacteriostatic effect, film property and safety. This paper reviewed the properties and applications of chitosan on the eggs, in order to provide a reference to the research and application of chitosan on fresh eggs preservation.
