摘要
为研究鸡蛋在贮藏过程中的新鲜度变化,构建鸡蛋的货架期预测模型,将鸡蛋贮藏在4℃、10℃、16℃、37℃,测定蛋重、蛋黄颜色、哈氏单位、蛋黄系数,在线性回归的基础上,分析不同贮藏温度、贮藏天数与鸡蛋哈氏单位的变化规律,构建鸡蛋哈氏单位与贮藏温度、贮藏天数之间的数学模型。结果显示:在4℃、10℃、16℃、37℃贮藏的鸡蛋哈氏单位与贮藏天数线性方程的R2分别为0.98、0.99、0.94、0.93;4℃贮藏的蛋重、哈氏单位、蛋黄系数下降幅度明显小于10℃、16℃、37℃贮藏时的下降幅度,其变化幅度均为37℃>16℃>10℃>4℃,且低温贮藏时鸡蛋的蛋黄颜色更深;根据不同贮藏温度下的哈氏单位建立了鸡蛋货架期预测模型,所获得货架期预测值与实测值相对误差在10%以内,当贮藏温度在4~37℃范围内可根据哈氏单位对鸡蛋的剩余货架期进行预测。
In order to study the freshness change of eggs during storage,the shelf-life prediction model of eggs was established.Eggs were stored at 4,10,16 and 37 ℃.The changes of quality,yolk color,Haugh unit and yolk coefficient of eggs were measured.On the basis of linear regression,this paper analyzed the changing rules of Haugh unit of eggs under different storage temperatures and storage days,and a mathematical model between Haugh unit of eggs and storage temperatures and storage days was established.The results showed that R2 between Haugh unit of eggs and the linear equation of storage days at 4,10,16 and37 ℃ were 0.93,0.98,10.94 and 0.93,respectively.In addition,it was found that the quality,Haugh unit and yolk coefficient of eggs stored at 4 ℃ decreased significantly less than those stored at 10,16 and 37 ℃,and the variation range was 37 ℃>16 ℃>10 ℃>4 ℃,and the yolk color of eggs stored at low temperature was darker.The shelf-life prediction model of eggs was established according to Haugh unit at different storage temperatures,the accuracy of predicted value of the shelf-life of eggs established in this experiment was less than 10%,and when the storage temperature was in the range of 4 to 37 ℃,the remaining shelf life of eggs could be predicted according to Haugh unit.
