富集ω-3多不饱和脂肪酸鸡蛋的研究进展 被引量:6

摘要 ω-3多不饱和脂肪酸(ω-3 PUFA)具有预防人体心血管系统疾病、益智健脑、维持正常视觉等重要生理功能,但人体合成不能满足自身需要,必须从食物中获取,而我国多数居民饮食中缺乏富含ω-3 PUFA的食物。开发富集ω-3 PUFA鸡蛋,可为人类获取富集ω-3 PUFA食物开辟一条新途径。本文概述了ω-3 PUFA的生理功能,分析了富集ω-3 PUFA鸡蛋开发的必要性及其调控机制,探讨了蛋鸡饲料中ω-3 PUFA的来源,最后展望了其发展前景,为其进一步研究开发富集ω-3 PUFA鸡蛋提供参考。 ω-3 polyunsaturated fatty acid (ω-3 PUFA)can prevent the diseases of cardiovascular system,promote mental development, maintain normal vision and so on. But it can't satisfy the requirement of human beings only through the synthesis of organism, we must obtain it from the food. The diet of most residents in China is lack of rich ω-3 PUFA food. Developing the high ω-3 PUFA egg is a new way to get high ω-3 PUFA food for people. This paper mainly summarized the basic property, the physiological function of ω-3 PUFA, and also analysed the necessity for developing high ω-3 PUFA egg and its regulatory mechanisms. Besides,it discussed the source of ω-3 PUFA in layer feed. At the end of this paper,the prospect of the high ω-3 PUFA egg was described. This paper would make a reference for further studying and developing high ω-3 PUFA eggs.
