摘要
ω-3PUFA(多不饱和脂肪酸)主要是α-亚麻酸(Linolenicacid;α-ALA)、廿碳五烯酸(EPA)和廿二碳六烯酸(DHA)。α-亚麻酸在体内可以生物合成EPA和DHA,所以ω-3PUFA食品功能主要体现在DHA和EPA诸多保健作用上。ω-3PUFA已经作为功能性成分添加到一些的食品中,在重视其保健作用的同时也要关注其食用安全性。
ALA, EPA and DHA was named ω-3 PUFA from muhi-twinbond in his structure, and by the biochemical transformation ALA could be transformed to EPA and DHA in the body. The functions of ω-3 PUFA food was focused on that of EPA and DHA's. ω-3 PUFA had been added into food as a additive, at the same time we focus on his functions the more attention we should pay to his security.
