摘要
通过跟踪不同发酵罐相同发酵时间的啤酒发酵液中的酵母形态指标百分数离散度,检测发酵结束后各发酵罐的啤酒的质量指标,得出啤酒酵母指标百分数离散度与啤酒质量的关联性,即酵母形态指标百分数离散度与酒精度、发酵度、总酸这三个啤酒质量指标成负相关,与原麦芽汁浓度、外观糖度、乙醛浓度、p H值、双乙酰这五个啤酒质量指标成正相关。
By tracking the dispersion percentage of yeast from different fermentation tanks with same fermentation time,the beer quality index in every fermentor was detected after fermentation.Then the relatedness between the yeast dispersion and the beer quality was found out.The relatedness was that the dispersion percentage of beer yeast morphological index had negative correlation with alcohol content,fermentation degree and total acid production,but in positive correlation with original wort concentration,optical sugar degree,acetaldehyde concentration,pH and diacetyl generation.
