摘要
二苯代苦味酰肼(DPPH)自由基被广泛应用于物质的抗氧化力评价。啤酒具有一定的内源性抗氧化能力是由于其含有的抗氧化物质能清除自由基的缘故。本文以DPPH为作用底物,初步建立了采用分光光度法测定DPPH自由基清除率的方法,该值与啤酒的抗氧化能力之间有较高的相关性。
1,1-diphenyl-2-picrylhydrazyl (DPPH radical) is widely used to test the ability of antioxidation. Beer shows endogenous antioxidative activity because of the antioxidants contained that can scavenge radicals. In this study a DPPH- spectrocolorimetery method is established to determine DPPH radical scavenging capacity, and the capacity has shown very close correlation with antioxidative activity of beer.
