摘要
介绍了基因工程技术在食品中的应用,主要包括改良食品加工原料、改良微生物;并利用转基因微生物生产食品添加剂。就提高牛乳产量、改善牛乳成分、生产乳品工业用酶、乳酸菌遗传及生物技术特性改良几方面对基因工程应用于乳中作一综述。
:This paper briefly introduced the application of genetic engineering in food industry,mainly including the modification of food material and transgenic microbe which can produce many kinds of food additives.The use of genetic engineering in dairy industry was discussed from four aspects:increased milk yield,improved lactic acid bacteria and milk composition,and producing enzyme.
