摘要
酶活性的高低是判定果实耐贮性大小和成熟衰老的重要标志。以壳聚糖为主要成膜材料,并辅以月桂酸钠改性的纳米TiO2,制备了一种新型安全无毒的涂膜剂壳聚糖/纳米TiO2复合涂膜,研究和比较了用壳聚糖单膜处理及壳聚糖/纳米TiO2复合涂膜处理后金秋梨采后生理及贮藏过程中POD、SOD、PPO活性的变化,以此衡量金秋梨的保鲜效果。实验结果表明:当壳聚糖/纳米TiO2复合膜中壳聚糖质量分数为2%,纳米Ti02质量分数为0.03%时,涂膜于金秋梨的表面,使金秋梨在贮藏后期的POD为2.18U·mg^-1min^-1,PPO为42.15(0.01△A·g^-1·min^-1)、SOD为216.72U·mg^-1,优于壳聚糖单膜及空白对照,各项酶活指标均得到改善,这些酶活性的变化都有利于果实贮藏和品质保证。
The hight of enzyme actiwty was the mportant maex to oecme one tugnt of the water resistance and Mature aging. Choosing chitosan as the main film--forming material, supple- mented nano--TiO2 modified by Sodium Laurate, prepared a new type of safe, non--toxic film called CTS--TiOz composite film. The effects of picked Jinqiu pear coated by chitosan or chitosan /nano--TiOz on physiology and storge were researched and compared. The results showed that when the ratio of chitosan and TiOz was 2 % ,0.03% separately, coating on the surface of the Jinqiu pear,making the POD 2.18 U . mg^-1.min^-1 ,PPO 42.15 (0.01△A . g^-1 . min^-1 ) .SODwas216.72 U .mg^-1 in post--harvest respiration, it was significantly better than CTS and control; various enzyme activity indexes had been improved;these changes were conducive to the fruit storage and quality assurance.
