摘要
经过长期研究,对于白酒人工催陈没有一种实用的有效方法。通过比较白酒的自然老熟和人工催陈研究,发现两者间存在较大差别,有的结论甚至相反,说明目前人工催陈研究在方法选择、指标运用等方面存在误区。提出白酒人工催熟研究的科学方法:首先要研究白酒自然老熟的老熟机理,其次选择适宜的白酒人工催陈方法,最后选择恰当的指标以衡量白酒的催陈效果。
There is still no effective liquor artificial aging research methods in practice after long-term research. Through the comparison between liquor natural aging research methods and liquor artificial aging research methods, different conclusions and even some contrary conclusions were obtained, which proved that some mistakes made at present in artificial aging research in the aspects of method selection and index selection etc. In this paper, we put forward scientific research method of liquor artificial aging: firstly, we should know clearly the aging mechanism of liquor natural aging; secondly, we should choose appropriate liquor artificial aging method; finally, we should choose appropriate indexes to evaluate the aging effects of artificial aging.
