摘要
近年来,随着机械装备和信息数字化产业的发展,中国白酒在继承传统工艺的同时,也在白酒生产模式转型升级方面做出了积极探索,并取得了大量研究成果与产业化应用。智能酿造在产量、质量上均体现出较高水平,且与传统工艺条件下制备的产品有较多相似。该文概述了白酒生产酿造全流程从原料、制曲、制酒、贮存、勾调、灌装等环节的机械化、自动化、智能化现状,并对智能酿造与传统酿造两种生产模式下大曲、糟醅、原酒的对比研究做了汇总,旨在为智能酿造的研究与应用提供一些参考。
In recent years,with the development of mechanical equipment and information digitization,many explorations have been made on Baijiu in transformation and upgrading on production mode while inheriting traditional techniques,and a large number of research results and industrial applications were obtained.Intelligent brewing demonstrates a high level of production and quality while their products have a lot of similarities with the products under the traditional process conditions.The current situation of mechanization,automation,and intelligence in whole process of Baijiu production including raw materials,Jiuqu making,fermentation and distillation,aging,blending,and bottling were reviewed in this paper.The comparative studies on Daqu,fermented grains and base liquor under two production modes of intelligent brewing and traditional brewing were summarized,aiming to provide some reference for research and application of intelligent brewing.
