摘要
脂肪酶广泛应用于食品、化工和生物技术等领域,反应体系涉及溶剂体系和水相体系;为提高脂肪酶在反应中活性和稳定性,可采取多种方法对脂肪酶进行修饰。该文对脂肪酶修饰方法进行综述。
Lipases were used widely in food, chemical engineering and biotechnology, and the reactions could be done in solvent and aqueous system. In order to improve the reaction activity and stability, many methods were applied to modify the lipase in the research. The methods for modification of lipases were reviewed in this article.
