微波辅助提取甘蔗皮色素工艺研究 被引量:4

摘要 甘蔗皮富含花青素等自然色素,可作为食品中健康安全的着色剂。为了优化提取工艺,本研究以贺州紫色甘蔗皮为原料,通过单因素实验、正交实验提取紫色甘蔗皮色素,并确定微波辅助提取的最佳提取工艺参数组合。结果表明最优工艺参数为微波功率250W,微波时间60s,料液比为1:30。在此条件下紫皮甘蔗色素的提取效果最好,可为批量生产提供参考和数据支持。 Sugarcane skin rich in anthocyanins and other natural pigment can be used as a food colorant in health and safety. In order to optimize the extraction process of the pigment, We used the purple skin of HeZhou sugarcane as raw material, Skin pigment of the purple sugar cane microwave assisted extraction process. Through single factor experiment sand orthogonal experiment, to determine the optimum extraction parameters, the results show that the optimal process parameters for the microwave power 250W, microwave time 60s, liquid to solid ratio 1:30. Under these conditions, Purple Cane measured the extraction of pigment was the best.
