摘要
对39个绿茶样黄酮类物质、多酚类物质、叶绿素与色度值之间的关系进行分析研究。相关性分析结果表明,黄酮类物质、多酚类物质和叶绿素与L*、a*、b*值均达到极显著相关,其中,黄酮类物质和叶绿素的相关性质相同、多酚类物质的相关性质与它们相反;通径分析结果表明,黄酮类物质对茶汤亮度、绿度和黄度有直接的影响,多酚类物质则间接影响茶汤亮度、绿度和黄度;经过回归分析建立了b*值在1.77~11.14范围内对黄酮类物质含量(F)的最优线性方程F=2.106+0.494b*。
Studies were carried out for providing more evidences to affirm the feasibility of applying L*a*b* specification system to appraise the infusion color and researching on the effect of flavone and polyphenol on the color quality of green tea infusion.Using 39 kinds of green tea processed in Fujian Province as the research material,relationships between chromatic values(L*,a*,b*)and biochemical compounds——flavone,Polyphenol and chlorophyll in green tea infusion were studied.Correlation analysis showed that there were very significant correlations between flavone,polyphenol,chlorophyll and color values(L*,a*,b*),and the nature of correlation of flavone and chlorophyll were contrary to polyphenol.Pathway analysis showed that flavone had direct effects on the brightness,greenness and yellowness of green tea infusion,while polyphenol mainly indirectly effected them.Through regression analysis,a best linear equation"F=2.106+0.494 b*"was derived,which was used to estimate flavone contents(F)with value(b*)within 1.77 to 11.14.Flavone had direct and positive effect on the color quality of green tea infusion,and the content of it can be estimated by the chromatic value(b*).
