绿色木霉菌发酵液的抑菌活性及稳定性 被引量:3

摘要 对绿色木霉菌(Trichoderma viride)发酵液在不同条件下的抑菌活性及稳定性进行了研究.结果表明,绿色木霉菌发酵液对真菌和细菌均具有较强的抑菌活性.在对真菌的抑菌试验中,对芒果胶孢炭疽菌(Colletotri-chum gloeosporioides Penz.)的抑菌效果最强,抑菌率为75.18%;在对细菌的抑菌试验中,对铜绿假单胞菌(Pseudomonas aeruginosa)和金黄色葡萄球菌(Staphyloccocus aureus)的抑菌作用最强,抑菌圈直径分别为37.33和34.00 mm;其抑菌活性室温至80℃范围内保持良好,而在pH 5~8范围内,其抑菌活性最好;微波处理对其抑菌活性影响不大;Cu2+和Fe3+对其抑菌活性影响较大,而K+、Na+、Zn2+、Mg2+和Fe2+对其抑菌活性影响较小;在0~0.12 mol/L苯甲酸钠、亚硫酸钠处理时,随浓度增大绿色木霉菌发酵液的抑菌率呈下降趋势,丙酸钙在此浓度范围内对其活性影响不大;0~8 g/L维生素C处理对绿色木霉菌发酵液的抑菌活性影响不大.绿色木霉菌发酵液抑菌活性在体积分数低于0.5%的H2O2处理时比较稳定,大于0.5%时其抑菌率开始下降. Antimicrobial activities and stabilities of Trichoderma viride fermentation broth in different con- ditions was studied. The experiment results showed that Trichoderma viride fermentation broth had high antifungal and antibacterial activity. Trichoderma viride fermentation broth showed the highest antifungal activity against Colletotrichum gloeosporioides Penz. in the antifungal experiment, and the inhibitory rate was 75.18%. It also showed that the highest antibacterial activity against Pseudomonas aeruginosa and Staphyloccocus aureus in antibacterial experiment, the average antibacterial diameters was 37.33 mm and 34. 00 mm, respectively. The inhibitory rate remained good between room temperature and 80 ℃. The optimal inhibition was observed at pH 5 -8. The inhibition was stable to microwave. Cu^2+ and Fe^3+ had great influence on the activity, but K^+ , Na^ + , Zn^2+ , Mg^2+ and Fe^2+ had a little influence on the activi- ty. The inhibitory rate declined with the concentration of sodium benzoate or anhydrous sodium sulphite increasing between 0 - 0. 12 mol/L, but calcium propionate had no obvious effect on the activity in that concentration range. Vitamin C had no obvious effect on the activity between 0 - 8 g/L. The inhibition was stable when volume fraction of H2O2 was under 0. 5%, the inhibitory rate began to decline when vol- ume fraction of H2O2 was over 0. 5 %.
