辽育白牛与5品种(杂种)肉牛的肉质对比试验报告 被引量:5

摘要 辽育白牛是辽宁省培育的肉牛新品种,为了测试辽育白牛的肉质,并与辽宁地区其他主要品种(杂种)肉牛进行比较,辽宁省牛育种中心开展了屠宰试验。试验测得的辽育白牛主要肉质指标为:育肥12个月、育肥16个月屠宰pH分别为6.9±0.3和6.7±0.4,分割pH分别为5.7±0.2和5.9±0.2,嫩度分别为3±0.3kg和3.8±1.5kg,大理石花纹等级分别为2.75±1.3和3.6±1.1,肉色分别为5.75±0.5和7±0.0,脂肪颜色分别为1.25±0.5和1±0.0。结果表明:辽育白牛牛肉保水性能好,肉质细嫩,并具备生产高档牛肉的遗传品质,是肉质优秀的肉牛新品种。 The Liaoyu White Cattle is a newly developed breed in Liaoning province, in order to test the beef quality of the Liaoyu White Cattle, and compared with other major varieties (hybrid) of beef cattle in Liaoning, Cattle Breeding Center in Liaoning province carried out the slaughter test. The main index of beef quality of Liaoyu White Cattle by the test were that: when fattening of 12 months, 16 months ,the slaughtered pH were 6.9±0.3 and 6.7±0.4 respectively, the divided pH were 5.7±0.2 and 5.9±0.2 respectively, tenderness were (3±0.3) kg and (3.8 ±1.5) kg respectively, marbling were 2.75 ±1.3 and 3.6 ±1.1 respectively, flesh color were 5.75±0.5 and 7±0.0 respectively, fat color were 1.25±0.5 and 1±0.0 respectively. The results showed that: Liaoyu White Cattle is a good beef which own welled water retention, tender beef quality, and the genetic quality of producing high-grade beef.
