摘要
比较分析了月鳢和乌鳢肌肉的营养成分。月鳢的蛋白质含量、氨基酸总量、必需氨基酸含量和鲜味氨基酸含量均高于乌鳢。从营养学的角度提示了月鳢食用价值优于乌鳢。
