摘要
对体重分别为50、150、300和600g匙吻鲟的肌肉成分分析表明,随着体重的增加,水分含量依次降低,蛋白质和脂肪的含量依次升高。体重300和600g的匙吻鲟蛋白质含量差异不显著(P>0.05);脂肪含量在4个生长阶段差异都显著(P<0.05)。氨基酸总量与鱼体内蛋白质含量趋势相同,都是随着体重的增加而增加。匙吻鲟肌肉中谷氨酸、赖氨酸、亮氨酸、天冬氨酸、甘氨酸和丙氨酸的含量都较高。体重300g和600g的匙吻鲟氨基酸含量无显著性差异(P>0.05)。
The analysis of body composition of Polyodon spathula at different growth stages, i. e. 50 g, 150 g,300 g and 600 g, showed a graduate decline in water content while the protein and fat content was elevated gradually with the increase in body weight. The difference of fat conten was always significant at these four growth stages (P 〈 0. 05). The protein content had the same tendency with the amino acid content, they all raised with the increase of body weight. In the muscle of Polyodon spathula, the content of Glu, Lys, Leu, Asp, Gly and Ala was relatively higher. The difference of amino acid content was not significant between body weight 300g and 600 g for Polyodon spathula ( P 〉 0.05 ).
