摘要
综述了近年来β-环糊精在国内外食品工业中的应用研究进展,并指出了我国目前β-环糊精在食品研究方面与国外存在的差距。
The structure and properties of cyclodxtrin have been reported. The applied advances of structure and properties of cyclodxtrin in domestic and abroad have been summarized. The current advances of the applied research of cyclodxtrin in food industry have been reviwed,also.
