摘要
以甜荞麦皮为原料提取荞麦皮色素。采用乙醇水溶液为溶剂,通过单因素试验和正交试验分析,结果表明:浸提温度对色素提取量的影响最大,其次为乙醇浓度和料液比。荞麦皮色素提取的最佳条件为乙醇溶液体积分数65%,料液比1∶50,提取温度80℃,提取时间1 h,在该条件下荞麦皮色素提取率达到6.71%。
Alcohol solvent was used to extract pigment from local buckwheat hull. Single and orthogonal test results showed that temperature had the greatest effect on the extraction amount of pigment, and then alcohol concentration and ratios of material to solvent.
