介绍了葡萄酒中有益健康的成分白藜芦醇及其衍生物,对影响葡萄酒中白藜芦醇含量的因素,如:酿造工艺、酿酒葡萄品种、病害侵染、产地等重要因素进行了综述。
Resveratrol, a natural health chemical, and its derivatives were introduced. The main factors which influenced the resveratrol content in wines such as enological technique, grape variety, pathogen infection and the region of wine production were reviewed.
