不同施氮水平对烤后烟叶中性致香物质含量的影响 被引量:19

摘要 通过田间试验和化学分析等方法,研究了不同施氮处理对烤后烟叶中性致香物质含量的影响。结果表明:随施氮量的增加,50种中性致香物质中,21种类胡萝卜素降解产物总量和10种Maillard反应产物总量表现为明显上升的趋势;4种苯丙氨酸类致香物质总量、1种西柏烷类致香物质和其它14种致香物质总量,以及50种中性致香物质总量表现为先下降再上升的趋势;在测定的50种中性致香物质中,有42种致香物质含量,以及50种致香物质总量与施氮量之间呈二元二次曲线变化,相关关系达显著或极显著水平。说明生产上可通过调整氮素养分管理方式改善烤后烟叶香气物质含量。 Field experiments and chemical analysis were carried out to study effects of different amount of nitrogen fertilizers on content of aroma substances in flue-cured tobacco leaves.Results showed that increasing amount of nitrogen,total content of 21 productions of carotene-degrading and 10 Maillard reaction products markedly increased;total content of 4 aroma aminophenol,one cembranoids,and total content of 14 other aroma substances decreased at first and then increased.The relationship between nitrogen amount and 42 neutral aroma components,and total content of different aroma substances can be simulated by dualistic and quadratic equation respectively with highly significant relation.It is possible to improve flavor quality in tobacco leaves through regulating measures of nitrogenous fertilizer.
