云南烤烟中性香味物质分析研究 被引量:128

摘要 应用溶剂提取、顶空分离、柱色谱、毛细管气相色谱等分级分离方法以及GC/MS、GC/IR分析鉴定技术,对我国的优质烤烟——云烟的中性香味物质做了分析研究,筛选出有云烟香味、组成较简单的香味物质组(集份),从香味物质组鉴定出129种成分。根据重点香味物质组Ia的分析数据,用已有单体做了云烟香味重组试验,配成的重组香味物加至东北中三单料卷烟,可产生近似云烟的烟香味。研究表明,云烟特征香味是多种香味物质按一定比例组成的。与河南烤烟香味物质初步对比分析也证实,云烟的清香与河南烟的浓香都是多种香味成分按各自不同比例组成的综合感官质量的反映。 The constituents of the neutral flavour of Yunnan flue—cured tobacco were investiqated using solvent extraction, headspace isolation, column chromatography, capillary gas chromatography, GC—MS and GC-IR.The several flavour fractions containing Yunnan tobacco characteristic flavour were sifted out and 129 constituents were identified from the fractions.The flavour reconstitution of Yunnan flue—cured tobacco was made according to the quantitative data of identified constituedts in main flavour fraction Ia.When the reconstituted composition of flavour was added to the cigartte making of the fluecured tobacco grown in northeast region of China, the flavour similar to Yunnan tobacco would be imparted to the cigarettes.The research shows that the characteristic flavour of Yunnan flue—cured tobacco consists of many kinds of flavorous constituents in certain proportion.This fact was confirmed by the comparative analysis of Yunnan flue—cured tobacco and Henan flue—cured tobacco that has the different characteristic flavour.
