摘要
冷藏链建设和完善对于提高食品质量、保障食品安全具有重要意义。文章简要介绍了水产品冷藏链的组成和特点,阐述了我国水产品冷藏链的现状。近年来我国水产品冷藏链无论在设备制造还是"链"的建设上都取得了长足的进步,但与发达国家相比仍处于较低的发展水平。最后,文章提出今后十年将是食品冷藏链蓬勃发展的时期,并提出了水产品冷藏链今后发展一些重点领域。
Cold chain is very important for food quality and food safety. The constitution and characteristics of cold chain were introduced. The recent situation of aquatic food cold chain in China was analyzed. Recently the equipment development and chain building of Chinese cold chain was getting along well, but the level was still in low compared with that of the developed countries. Finally, it was expected that the cold chain will be developed fast in the coming ten years, and the hot fields of cold chain in the future was also brought forward.
