摘要
本文分析了不同的贮藏温度条件与水产品品质的关系,介绍国内外已进行的贮藏温度变化对水产品品质影响的实验研究现状,指出以往研究的特点,并对今后水产品冷藏链的研究方向提出了建议。
The relationship between storage temperature and quality of aquatic products was analyzed. The current situation of experimental researches made at home and abroad on the quality of aquatic products affected by the temperature was introduced and the results of these researches were summarized. The direction of future research on the aquatic product cold chain was also suggested.
