摘要
巴西蘑菇子实体干菇和鲜菇的水分、粗蛋白、粗脂肪、总醣、粗纤维和灰分含量分别为13.7%,36.8%,2.4%,40.2%,6.5%、7.4%和87.2%,5.78%,0.41%,3.34%,1.02%,0.81%。其干菇含水溶性多糖2.32%;含硫胺素0.32mg/100g,核黄素3.16mg/100g,烟酸18.9mg/100g,麦角甾醇117mg/100g;含钙、镁、磷、锌、铁、锰、铜等矿质元素146μg/g,1160μg/g,10mg/g,143μg/g,238μg/g,20.5μg/g和1.9μg/g。其全氨基酸总量为30.87%~32.03%,其中必需氨基酸占42.8%,脂肪酸构成以亚油酸(78.5%)和棕橺酸(13.1%)为主。
It was proved that the average contents of moisture, crude protein, crude fat, total carbohydrate, crude fiber and ash were 13. 7% , 36.8% , 2.4%, 40. 2% , 6.5%, 7.4% for dry A . blazei fruitbodies and 87. 2%, 5.78%, 0.41%, 3.34%, 1.02%, 0.81% for fresh A. blazei fruitbodies resp. ; that the contents of water soluble polysaccharide, Vitamin B1, B2, PP and ergosterol (precursor of VD2) were 2. 32% , 0. 32mg/100g, 3. 16mg/100g, 18.9mg/100g and 117mg/100g resp. ; that the contents of Ca, Mg, P, Zn, Fe, Mn, Cu were 146μg/g, 1160μg/g, 10mg/g, 143μg/g,238μg/g, 20.5μg/g and 1.9μg/g resp. ; and that the total amino acid content, and the ratio of essential amino acid were 30. 87% -32. 03% and 42. 8% (E/T=0. 428) resp. , while the linoleic acid and palmitic acid contents were 78.5% and 13. 1% resp. .
