摘要
以北冬虫夏草为原料,采用水浸提法确定最佳提取条件。以低、中、高三个剂量组进行保健生理功能实验,确定提取物的最佳使用剂量。并以效果最佳提取物剂量为主料,适当加入食品添加剂,配制成一种具有保健功能的饮料。实验结果表明,北冬虫夏草浸提最佳工艺条件为料液比1∶6,浸提时间90min,浸提温度70℃;中剂量组在调节体液免疫、非特异性免疫和提高耐力方面与对照组具有显著差异。通过正交实验,获得北冬虫夏草饮料的最佳配方为:浸提液10%,甜菊糖0.04%,苹果酸0.15%,食品级CMC0.02%。
The cultivated Cordyceps militaris was extracted by water, the optimum technical parameter was determined via the orthogonal experiment. The factors of the orthogonal experiment design were the dosage of extracted liquid, sour additive, sweet additive and food-grade CMC. The obtained optimum technical parameters of extraction were that the ratio of material to water was 1∶6, the extracted time was 90 min, the extracted temperature was 70℃. The best beverage formula was 10% the extraction liquid, 0.04% steviosin, 0.15% malic acid, 0.02% food-grade CMC. The results of the physiologic function experiments of Cordyceps militaris extractive showed that the difference between the medium dose group and the control group was significant in the humoral immunity, the nonspecific immunity,the influence of blood glucose and the endurance capacity, which indicated the development value of Cordyceps militaris functional drinks .
