摘要
通过对五粮液和黄金酒的营养成分及香气物质含量的分析,两种酒均含有17种氨基酸,总量分别为2.1×10-4g/mL和3.2×10-4g/mL;含有维生素A、B、C、D、E等12种;含有钙、镁、锌、硒等矿物质12种;含有醇类、酯类、有机酸类、羰基化合物类、缩合醛类等香气物质41种,适当饮用这两种酒有利于身体健康。
The nutrient compositions and aroma compounds in Wuliangye and Huangjin liquors were determined in this paper.Results showed that both of the two liquors conteined 17 kinds of amino acids and the total amounts of amino acids in Wuliangye and Huangjin liquors were of 2.1×10-4 g/mL and 3.2×10-4 g/mL,respectively.12 kinds of vitamins,such as vitamin A,vitamin B,vitamin C,vitamin D,vitamin E,etc;and 12 mineral components,such as Ca,Fe,Mg,Se were also found in the two liquors.Besides,they also contained 41 aromatic substances,such as alcohols,esters,organic acids,aldehydes,ketones.It was thus concluded that moderately drinking the two liquors might benefit health.
