3-氯-1,2-丙二醇的毒理学研究进展 被引量:6

摘要 氯丙醇类化合物是目前国际上广为关注的食品污染物,而3-氯-1,2-丙二醇(3-MCPD)因在食品中污染量大、毒性强,被用作氯丙醇的代表和毒性参照物[1]。食品中3-MCPD主要存在于利用酸水解蛋白(即含蛋白质的植物,或某些动物性原料如动物毛发,经盐酸高温高压下的水解产物)加工而成的酱油、蚝油等调味汁,复合调味料和方便食品中[2]。有关调查表明,
