摘要
利用微机控制电子万能试验机测量了鸡肉的压力特性曲线,分析了肉的弹性与其新鲜度的关系以及肉的压力特性曲线中各参数与肉的弹性及其新鲜度之间的关系。结果表明,肉的压力特性曲线中多个力学参数能够反映其新鲜度。该测试方法使多年来肉的弹性测量从定性变成定量,为仿生触觉检测评价肉新鲜度技术的应用提供了参考。
The pressure characteristic curves of chicken were measured using a micro-tensile testing machine.The relationship between meat elasticity and meat freshness,as well as the relationship between the parameters in the pressure characteristic curve and the meat flexibility and freshness were analyzed.Results indicate that,several mechanical parameters in the meat pressure characteristic curve can reflect its freshness.This method changes the qualitative meat elastic test to quantitative test.It provides a technical reference for widespread application of biological tactile detecting technology for meat freshness evaluation.
