摘要
研究了以猪胰脂肪酶为催化剂在无有机溶剂体系中由棕榈油通过甘油解反应合成单甘油酯。结果表明,当反应温度为20℃,甘油与油脂摩尔比为2∶1,甘油中含水质量分数w为4%,反应时间20h左右时获得的单甘酯w达2417%,降低体系的反应温度到12~13℃,单甘酯含量进一步提高,4d后达到平衡,单甘酯w为3093%。
Monoglycerides can be produced by porcine pancreatic lipase—catalyzed glycerolysis of palm oil in no solvent system. The study shows that the maximal content of monoglycerides was given up to 24.17% after 20 hours when the reaction temperature was kept at 20℃, the molar ratio of glycerol to palm oil was 2∶1 and water content in glycerol was 4.0%. The content of monoglycerides continued to increase up to 30.93% after 4 days when the temperature of reaction mixture decreased to 12~13℃.
