摘要
选用木瓜蛋白酶水解大豆分离蛋白,对原料预处理条件,酶解条件进行了研究。实验结果表明:原料预处理最佳条件为:水中80℃处理15min,酶解最佳条件为:底物浓度45%,酶浓度9000u/g,pH7,55℃。
Soybean protein isolate (SPI) is hydrolyzed with papain,the condition of denaturation,enzymatic hydrolysis are studied systematically.Experiments show that the optimum conditions are:denaturation of SPI by heating in water at 80℃ for 15 min,enzymatic hydrolysis of SPI::4.5%,:9 000 u/g ,pH7,55℃.
