摘要 系统地介绍了我国啤酒工业副产物产生的基本情况及啤酒糟、啤酒废酵母的利用现状,讨论了这一领域国内外开发研究的新技术、新思路、新进展及部分深加工产品开发状况. The basic producing situation and present utilizing ways, in China,of beerby-products such as beer lees and spent yeasts are systematically described here. How todispose and exploit the value of natural resources has become a specially researched field inrecent years. Some new ideas, technologies, developments, and highly-processed products inthisfield from home and abroad are stated and discussed in order to develop an effective model for re-utilization engineering of brewery by -products, which could be beneficial for the sustainable development of environment and resources .All of the thoughts discussed and suggested here can also serve as valuable information for future researches and comprehensive utilization in this field.
