摘要
以南瓜粉为原料,进行酸水解法提取南瓜粉中的水溶性膳食纤维的研究。结果表明:提取水溶性膳食纤维的适宜条件为:pH值1.0,水解时间2 h,水解温度80℃,料液比为8∶1,水溶性膳食纤维的产率23.60%,成品呈黄白色,质地好。
The water-soluble food fiber was extracted from pumpkin powder by the acid-hydrolysis method. The results show that 23.60% water-soluble food fiber can be extracted under the condition of pH 1.0, 2 h, 80℃ and 8 : 1(water : solid ). The product is yellow-white and the quality was well.
